Roasted Butternut Squash-Cauliflower Soup
Ingredients
- 1 Butternut squash
- 3 cups of cauliflower
- 1 onion
- high temperature stable oil like avocado oil
- 1L of low sodium broth
- 3 tbsp Bone Broth Powder
- Sea Salt, black pepper, curry powder, turmeric & cinnamon to taste
Directions
- Peel, chop & roast: butternut squash, cauliflower, onion (tossed in a high temperature stable oil like avocado oil)
- Simmer in broth
- Add Bone Broth Powder
- Blend and return to pot to simmer
- Add Sea Salt, black pepper, curry powder, turmeric & cinnamon to taste
