Roasted Butternut Squash-Cauliflower Soup

Ingredients

  • 1 Butternut squash
  • 3 cups of cauliflower
  • 1 onion
  • high temperature stable oil like avocado oil
  • 1L of low sodium broth
  • 3 tbsp Bone Broth Powder
  • Sea Salt, black pepper, curry powder, turmeric & cinnamon to taste

Directions

  1. Peel, chop & roast: butternut squash, cauliflower, onion (tossed in a high temperature stable oil like avocado oil)
  2. Simmer in broth
  3. Add Bone Broth Powder
  4. Blend and return to pot to simmer
  5. Add Sea Salt, black pepper, curry powder, turmeric & cinnamon to taste
