Vegan Red Curry Bowl
Ingredients
- 1 sweet potato
- 1-2 cups of cooked quinoa
- 1 yellow onion
- 1-2 minced cloves of garlic
- 1-2 cups chopped broccoli
- 1-2 cups chopped cauliflower
- 1-2 cups chopped bok choy
- any other veggies you like (celery, zucchini, carrots, etc)
- 1/2-1 cup full fat coconut milk
- 1-2 cups chickpeas
- 1 tsp grated ginger
- black pepper
- 1-2 tsp red curry paste
Directions
- Chop & roast sweet potato
- Prepare 1-2 cups of cooked quinoa
- Saute (in coconut oil) yellow onion, minced cloves of garlic, chopped broccoli, chopped cauliflower, chopped bok choy, and any other veggies you like (celery, zucchini, carrots, etc)
- Combine all ingredients in a pot with full fat coconut milk, chickpeas, grated ginger, black pepper, and red curry paste
